The Drappier vineyard covers 250 acres and is known for its excellent wines. Since 1808, Drappier has tilled its advantageously exposed high-limestone grapes located in the Urville area; its Pinot Noir is allowed to express itself and produces elegant, aromatic wines. The Carte d'Or cuvée vinification process: Only the juice from the first pressing (the cuvées) is used. Low-pressure mechanical wine presses. Gravity is used instead of pumps. Low-temperature fermentation takes place for approximately two weeks. The next step is natural and full malolactic fermentation. Minimal amounts of sulfur are used. The wine is barrel-aged for a period of one year to add a smoothness to the cuvée and then bottled and cellar-aged sur latte for two years. Dosage: 7 g/l A very aromatic champagne with stone fruit flavors including white peach. A touch of spice for a nose that is powerful and complex. A heady, complex Champagne with a characteristic touch of quince. Perfect as an aperitif. Serve with white meat, fish or cheese. Serve at 7 C.
