The Drappier vineyard covers 250 acres and is known for its excellent wines. Since 1808, Drappier has tilled its advantageously exposed high-limestone grapes located in the Urville area; its Pinot Noir is allowed to express itself and produces elegant, aromatic wines. Only the juice from the first pressing (the cuvée) is used. Low-pressure mechanical wine presses. Gravity is used instead of pumps. Low-temperature fermentation takes place for approximately two weeks. The next step is natural and full malolactic fermentation. No filtration is used. 50% of the wines are cask-aged for a period of one year then the cuvée is cellar-aged sur latte for a period of five years. The disgorgement date is noted on each label. Dosage: 5.6 g/l, alcohol aged in Limousin oak barrels. It has a complex, rich nose and notes of citrus, bread, hazelnut and almond blend together. A touch of vanilla is testament to the strong dose of Chardonnay as well as the fullness of the Pinot Noir that makes itself known through the notes of red berries. Perfect as an aperitif. An excellent accompaniment to veal, risotto, poultry or fish. Serve at 7 C.
